BREAKFAST
I enjoy everything about breakfast ... the fresh start of a new day, and what is more luxurious and indulgent than a lazy weekend brunch - the smell of coffee, a frittata baking, and bacon sizzling. It is often my favorite meal of the day, especially if we have overnight company.
Frittatas are at the top of my list; it may because I find eggs so very satisfying. The frittata I have created for you begins with a base of roasted vegetables. It is gratifying to me to take the extra step of roasting vegetables. They are sweet and their flavor is intensified in the roasting process. The addition of fresh basil and feta gives this frittata a big, bold flavor. What a way to take on the day!
APPETIZER
These little morsels are scrumptiously delightful. This recipe could not be simpler for entertaining and one little tartlet is a measly 24 calories. Purchase the tartlets and simply fill with caramelized mushrooms and onions, topped with asparagus and cheese. Your guests will gobble these up, so you may want to have plenty on hand. They are crunchy, tasty, and extremely satisfying!
DESSERT
I don't recall loving much about high school but one thing I know for sure, I found Home Economics totally captivating, especially cooking and baking. I could hardly wait to get to Home-Ec class twice a week. Everything I learned in the classroom I wanted to try at home. So began my fascination with the jelly roll. A jelly roll delighted me; it was a work of art rolled together with yumminess in the middle. My sister recalls me coming home from school and making them with jelly oozing out the sides, much to her delight.
My Pumpkin Cream Cheese Roll is definitely in a class of its own. Is there anything better than pumpkin spices in the fall ushering in the Holiday Season? Not much, unless the pumpkin mixture is rolled with cream cheese filling and walnuts. Using Monk Fruit Sweetener and Swerve Powder Sugar in my recipe keeps the calories down without wreaking havoc with your blood sugar. This recipe "takes the cake" if you are looking for a bit of yumminess without expanding your waistline!
